Quick Dinner : Bagel Pizza

Dinner time at our house tends to be a last minute affair during the school week. The hubby works a swing shift on a rotating schedule and we only see him for dinner 2-3 days a week. The other nights it's just me and three kids so I'm always in search of fast, simple, and tasty meals. Last week I was in the mood for pizza and was not about to load up the kids to go out so off to the fridge I went to see what we had that would pass for pizza. In less than the promised pizza delivery time we had homemade, hot, and yummy pizza on our plates.

This one is super simple and you only need 4 things. 1) Bagels (plain, herb, or cheese variety would all be good). 2) Spaghetti sauce. 3) Mozzarella cheese. 4) Toppings (olives, pepperoni, pineapple, mushrooms, whatever you like).

Cut the bagels in half and arrange them on a cookie sheet or pizza stone. Spread appx. 1 tablespoon of spaghetti sauce (more or less to your preference) on the inside of each bagel. Then top with cheese and toppings and toss it in the oven. We used frozen cheese and baked at 350° for 20 minutes but if you are using fresh ingredients it should only take about 10 minutes. When the cheese is all melted and starting to brown, take them out and serve hot.


This will now be our stand in for pizza night and with how fast and easy these are, I will never again buy a frozen pizza!

Quick Banana Cookies

In the mood for cookies? Got a few ripe bananas? Then you're in luck, because these are the fastest, easiest 2 ingredient cookies you will ever make. Don't believe me? You will when you try them. Plus they are healthy and delicious!

Ingredients:
2 large over ripe bananas
1 cup of quick oats.
YUP--that's it!!

You can add in choc chips, coconut, or nuts if you'd like. We did some with chocolate chips and a few with Hershey kisses just for fun.

Mush together the bananas and oats (and anything else you want to add).
Place mix in small clumps on a cookie sheet.
Bake at 350º for 15 mins and ENJOY!
