Spring to me means the beginning of salad season. We have some sort of salad with just about every meal during the warmer months so I've had to come up with some variety and surprises to having the normal boring tossed green salad every night. With that in mind, I thought I'd share one of our favorites.
Apple Pie Coleslaw
1 small head cabbage
1 large green apple
2 stalks celery
2 Tbsp. sugar
1/8 tsp. cinnamon
pinch Nutmeg
1/4 tsp. salt
1/2 cup mayonnaise (or sour cream)
1 tsp. lemon juice
Shred or thinly chop cabbage. Cut apple and celery into small chunks. If your prefer, you may thinly slice apples. Place in a large bowl. In a separate bowl, combine all the remaining ingredients. Pour the dressing over the salad and toss until well coated. Serves appx 10.
