Banana Mug Bread

It's very cold here today so I think it's time for a yummy treat that's also warm and easy to make! Got an over ripe banana? Then it's time to enjoy some warm and soft Banana Bread in a Mug.


Banana Mug Bread
3 Tbsp. + 1 tsp. all-purpose flour
2 tsp. sugar
2 Tbsp. brown sugar
1/8 tsp. salt
1/8 tsp. baking powder
1/8 tsp. baking soda
1 egg
1/4 tsp. vanilla extract
1 Tbsp. vegetable oil
1 Tbsp. milk
1 ripe banana, mashed
cinnamon, for sprinkling (optional)
Microwave

In an extra-large (it will run over if you use a standard size) microwaveable mug lightly misted with non-stick spray, blend flour, sugars, salt, baking powder & baking soda. Add egg & mix until all the dry ingredients are incorporated. Stir in vanilla, oil & milk. Lastly add mashed banana and sprinkle with cinnamon (optional). Microwave 1-1/2 to 3 minutes, depending on microwave.

*Bread will rise over the top of the mug during heating (see picture). When removed, if the bread is still runny, add more cooking time, checking often until done.*

This makes enough bread to share, but you don't have to if you don't want to, and you won't want to! It's about a mini loaf serving size. Infact, I think I'll cook it in a ceramic mini loaf pan next time just for fun. I'll let you know how that goes.
